Hi Sandra, I ride from Eltham to Mulgrave on a semi-regular basis of once a week.
There are no stand out 'good' options for you - all major roads but none that I would call death traps as long as you're careful.

- I have multiple BMX, Road, and mountain bikes and one Tandem. Mostly ride an Avanti Agressor. Approx 18 bikes in total.

- Fresh air and peaceful (when not on busy roads)

I did not get a chance to ride last weekend so I don't know if it is finished yet. I can see some structure slightly protruding down from the middle and the earth beneath has been cleared they may be putting a support column there but not sure.
